Miyagi is home to twenty-five sake breweries. Decades of improvement in rice cultivation, famous master brewers refining their technique, and unique innovations have helped Miyagi shape the path of the entire industry. Today, Miyagi sake consistently places highly at many national and international competitions. That said, it could be that the original drive to produce delicious sake in Miyagi was simply to quench the thirst of a powerful samurai.
Since its conception, Tanaka Shuzoten has
inherited traditional sake brewing methods
(such as the Kimoto and yamahai brewing
methods) for more than 230 years while
using high-quality water and rice in the
production of sake.
We, at Tanaka Shuzoten, continue with
manual processes-making koji entirely by
the koji tray method, steaming rice in a
traditional tub (koshiki), and applying
cedar warmer for shubo makings, etc.
Sake with an “assertive sake texture” is
thus produced.
Keeping to the traditional sake production
method, we have become a brewery
trusted by our local community.
We contribute to our local community by
purchasing half of our sake rice from local
contracted farmers. Our recent and current
activities include the attainment of the
“Vegan Certification” and working toward the
achievement of the “Organic Certification.”
We are operating with strict food hygiene
control based on the Hazard Analysis Critical
Control Point (HACCP) principles, which
need to be followed by food manufacturers.
